What's cooking with Canopy Rose Catering & Special Events, the legendary Tallahassee Florida catering company that shuttered it's doors a few years ago? Canopy Rose founder (aka Kathi Dameron) is still very involved with the culinary arts field.

Most of her creations today are at the keyboard where she writes food and entertaining stories, or in her culinary studio/ workshop where she is tweaking ideas for future cooking classes and cookbooks or in creative collaboration on a variety of exciting top secret projects.

The assignment I was given to blog about was identified as ink pens.

"That should be easy," I thought. I race through the ink in a pen in record speed. Why every week I think I toss out a handful of dried-up pens.

I wish someone would come up with something like solar-powered bottomless ink pens that never run out of ink. Now there is an idea... a strange one, I suppose. But at any rate the blog assignment is completed.

When delivering the makings for a large multi-tented soiree, many logistical details must be attended to if your desire is to pull off a seamless event.

After the logistical plans are carefully laid out, you will need to decide how everything is going to be transported to the location of the event.

For very large events with thousands of guests in attendance, you may need to rent additional trucks.

If doing super-sized events is the norm, then you might find it to be a more cost effective strategy to invest in customized trucks with ladder racks.

How frustrating it must be to forget things that were once so easy to remember.

How frustrating it must be to be a wise old sage with so much to offer to the world, yet find that the world is ready to discard that which is seasoned, in favor of that which is green.

But as the baby boomers take their place among the ranks of the aged... a revolution is in store. Yes, a revolution unlike anything that this world has ever seen. This revolution will transform societies appreciation of its most valuable senior population.

These seniors will continue to change the world in extraordinary ways, and if they come with disposable underwear under their garments, then more power to them!

Shopping for home furniture is one of my favorite passions. I love to shop in stores and on websites where the experience is elevated to something divine and where I feel as though I have had a very special experience.

After a solid, foundational career in catering, special events and classroom teaching; I am looking forward to a synergistic move into the culinary arts as a college-level chef-instructor.

The timing seems pre-ordained. My desire- divine. I can not wait.

Every once in awhile I come across one of my old promotional Canopy Rose ballpoint pens.

Through the years I purchased countless cases of these handy marketing tools.

I've decided that I want to become a real estate investor. Real estate is probably the oldest and most secure way to wealth in our world. When you have wealth, you have so much more control over your choices and options in life.

The chimes of a grandfather clock take me back to my earliest memories. The favorite old melody recalls happy times, some sad times and of course, the natural progression of life that is measured through the lyrics of a singing and stately family heirloom clock.

No matter how hard we might try, we can not halt the passing of this most precious commodity known as time.

Of all the things of this world, when it comes to time, there is total equality. Each of us has the same allotted 24 hours in a day. The only real difference is how we choose to spend those 24 hours. Will we cherish them as the priceless and indescribable gift from God that they are or will we squander them with reckless abandon?

During the years I've been on just about every diet out there. But dieting is really hard when you love food as much as I do!

Researching at the public library and on the Internet is one of my favorite things to do. Whenever I engage in a project, I want to know as much as I can, so that I can do the best job possible.

One of my latest projects has been to embark on a journey of weight loss. During my years owning a catering business, I stayed perpetually stressed by the ongoing demands of trying to create perfection.

My way of dealing with the constant call of perfection was to down sugary gourmet brownies and press ahead to deal with the most important challenges of the day.

One day my body cried out to stop. It wasn't a good life. The stress was about to kill me.

I shuttered the business and picked up my pen. "I'm going to be a writer" I thought as I realigned my life.

A couple months ago I realigned my diet to reflect healthy choices. Now, I am being led to write on topics related to losing weight. I've recently discovered the Diet Review in my research and writing.

There use to be this great catering company in Tallahassee, Florida called Canopy Rose Catering. It was owned by caterer, Kathi Dameron and they catered some of the best parties in the South. Canopy Rose Catering was known for creating events that popped!

After many years of popping ... Kathi got tired and decided to take a break. So she shuttered the business and propped her feet up on her leather ottoman and started writing.
